  • 2 Tablespoons non-alcoholic eggnog, at room temperature
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 10 Tablespoons unsalted butter, softened to room temperature
  • 2 cups confectioners’ sugar
  • 3 Tablespoons non-alcoholic eggnog, at room temperature
  • 1/4 teaspoon pure vanilla extract
  • Pinch each of salt, ground cinnamon, and ground nutmeg

Instructions

  1. 1. In a medium bowl, whisk together flour, cinnamon, nutmeg, oats, baking soda, and salt.
  2. 2. In a large bowl, cream together softened butter and brown sugar until fluffy.
  3. 3. Add eggnog and egg to the mixture, beating until well combined.
  4. 4. Gradually mix in dry ingredients until just combined.
  5. 5. Chill the dough in the refrigerator for at least 2 hours.
  6. 6. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. 7. Roll chilled dough into balls and place on prepared sheets; bake for 11–12 minutes.
  8. 8. Allow cookies to cool before making the cream filling by beating softened butter with confectioners’ sugar, eggnog, vanilla extract, and spices until fluffy.
