Ingredients

Scale
  • 1/2 cup softened butter
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup non-dairy milk
  • 1 tbsp vanilla extract
  • 1 & 1/4 cup old-fashioned whole rolled oats
  • 1 cup all-purpose flour
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
  3. In another bowl, whisk together flour, oats, cinnamon, nutmeg, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Use a cookie scoop to portion dough onto a lined baking sheet, gently flattening each ball. Bake for about 10 minutes until soft.
  5. Allow cookies to cool on the baking sheet before transferring them to a rack. Prepare icing by whisking powdered sugar, milk, and vanilla together until smooth; drizzle over cooled cookies.
