  • 1/2 cup salted butter, softened
  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • For the cinnamon sugar swirl: 2 tbsp melted butter, 1 tbsp oat flour, 2 tbsp white sugar, 1/2 tbsp cinnamon
  • For the streusel topping: 1/4 cup slightly softened butter, 1/4 cup light brown sugar, 1/4 cup almond flour, 1/2 cup oat flour, 2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together softened butter, applesauce, eggs, sugar, and vanilla until smooth.
  3. Add almond flour, oat flour, baking powder, and salt; stir until well combined.
  4. In another bowl, combine melted butter with oat flour, white sugar, and cinnamon for the swirl filling.
  5. For the streusel topping, mix slightly softened butter with brown sugar, almond flour, oat flour, and cinnamon until crumbly.
  6. Grease an 8×8 baking dish; pour half of the batter into the dish. Layer half of the cinnamon sugar filling on top and gently swirl. Repeat with remaining batter and filling.
  7. Bake for about 25 minutes; add streusel topping and bake for an additional 18 minutes or until golden brown.
  8. Allow to cool completely before slicing into squares.
