  • 1 15-ounce package extra firm tofu, drained
  • 1/2 cup non-dairy milk, unsweetened
  • 1/2 cup buffalo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne (optional)
  • 4 cups potato chips, crushed into crumbs
  • Olive oil spray
  • 1/4 cup vegan mayo
  • 23 tablespoons sriracha
  • 1 tablespoon rice vinegar
  • Fresh parsley (optional, for serving)

Instructions

  1. Combine non-dairy milk, buffalo sauce, garlic powder, onion powder, dried parsley, dried oregano, smoked paprika, pepper, and cayenne in a bowl.
  2. Cut drained tofu into bite-sized pieces and submerge them in the marinade. Refrigerate for at least 30 minutes.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Coat marinated tofu pieces with crushed potato chips and arrange them on the baking sheet. Lightly spray with olive oil.
  5. Bake for 20-25 minutes until golden brown and crispy, flipping halfway through.
  6. While nuggets bake, mix vegan mayo, sriracha, and rice vinegar to create bang bang sauce.
  7. Serve warm with the sauce.
