  • 2 teaspoons smoked paprika
  • Kosher salt and ground pepper (to taste)
  • 2 medium sweet potatoes (peeled and diced)
  • 30 ounces can black beans (drained and rinsed, 2 cans 15 oz each)
  • 2 cups water or low-sodium vegetable stock
  • Freshly chopped cilantro (for garnish)
  • Crusty bread (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until soft (about 3-4 minutes).
