- 4 ears fresh corn, cooked and kernels sliced off
- 1 pint cherry or grape tomatoes, halved
- 1/2 red onion, finely chopped
- 1/2 cup chopped fresh cilantro
- 1 large avocado, diced
- Juice of 2 limes
- Salt and black pepper, to taste
Instructions
- Cook the corn by boiling it for 1½ – 2 minutes until tender or grilling for a smoky flavor. Allow to cool before slicing off the kernels.
- While cooling, halve the cherry tomatoes and finely chop the red onion and cilantro.
- In a large bowl, combine cooled corn kernels, tomatoes, onions, and cilantro. Squeeze in lime juice and sprinkle with salt and pepper; toss gently.
- Chill the salad in the refrigerator for at least an hour before serving to enhance flavors.
- Just before serving, add diced avocado either mixed in or placed atop individual portions.
