- 4 large bell peppers (any color)
- 1 pound ground turkey (93% lean)
- 1 cup cooked brown rice
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 can diced tomatoes (14.5 oz, drained)
- 1 teaspoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup low-fat shredded mozzarella cheese (for topping)
- 2 tablespoons fresh parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet over medium heat, sauté diced onion and minced garlic in olive oil until softened.
- Add ground turkey and cook until browned; break it apart as it cooks.
- Stir in drained tomatoes, cooked brown rice, oregano, basil, salt, and pepper; cook for an additional 5 minutes.
- Stuff the mixture into each bell pepper and place them in a baking dish.
- Cover with foil and bake for 30-35 minutes until tender.
- Remove foil, sprinkle mozzarella cheese on top of each pepper, and bake uncovered for another 5 minutes until cheese is melted.
- Garnish with fresh parsley before serving.
