Ingredients

Scale
  • 2 tablespoons vegetable oil
  • 4 egg whites
  • 1 1/3 cups water
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 box white cake mix (typically around 15.25 oz)
  • 1 cup all-purpose flour
  • 1 cup sour cream (8 oz container)
  • 1 cup butter, softened
  • 8 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 8 oz cream cheese, softened
  • 24 tablespoons heavy cream (to adjust consistency)
  • 12 fresh strawberries, sliced for garnish
  • 20 Golden Oreos
  • 3.4 oz box strawberry Jello powder
  • 4 tablespoons butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine vegetable oil, egg whites, water, granulated sugar, vanilla extract, and salt until well blended.
  2. In another bowl, mix white cake mix with all-purpose flour. Gradually add this dry mixture to the wet ingredients while stirring gently.
  3. Fold in sour cream until fully incorporated for added moisture.
  4. Line a cupcake pan with liners and fill each two-thirds full with batter. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool completely.
  5. For frosting: Beat softened butter and cream cheese together, then gradually add powdered sugar until smooth. Stir in vanilla extract and adjust consistency with heavy cream as needed.
  6. Frost cooled cupcakes generously and top with crushed Golden Oreos and fresh strawberry slices.
