  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together pumpkin puree, melted butter (or oil), brown sugar, granulated sugar, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Gradually combine the dry ingredients into the wet mixture until just combined.
  5. Fold in oats and chocolate chips.
  6. Drop tablespoon-sized scoops of dough onto the prepared baking sheet.
  7. Bake for 10–12 minutes or until lightly golden around the edges.
  8. Cool on the baking sheet for a few minutes before transferring to wire racks.
