  • 1 pound dried elbow pasta
  • 5 1/2 cups whole milk
  • 4 ounces cream cheese
  • 4 cups smoked Gouda cheese, shredded
  • 8 tablespoons unsalted butter
  • 1/2 cup all-purpose flour
  • 2 cups Panko bread crumbs
  • 1/2 cup Parmesan cheese, shredded
  • 1 tablespoon Dijon mustard
  • 2 teaspoons salt
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon fresh thyme leaves

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, mix Panko bread crumbs, 1/4 cup Parmesan cheese, thyme leaves, and melted butter until combined.
  3. In a saucepan, heat milk over medium heat. In another skillet, melt butter and whisk in flour; gradually add warm milk while stirring until thickened.
  4. Remove from heat; stir in mustard, salt, spices, cream cheese, and 3 cups of smoked Gouda until smooth.
  5. Cook the elbow pasta according to package instructions until al dente. Drain well and return to the pot.
  6. Pour the cheese sauce over the pasta and stir well.
  7. Transfer the mixture to a buttered casserole dish; top with remaining Gouda and breadcrumb mixture.
  8. Bake for about 30 minutes or until golden brown on top.
