- 1 pound dried elbow pasta
- 5 1/2 cups whole milk
- 4 ounces cream cheese
- 4 cups smoked Gouda cheese, shredded
- 8 tablespoons unsalted butter
- 1/2 cup all-purpose flour
- 2 cups Panko bread crumbs
- 1/2 cup Parmesan cheese, shredded
- 1 tablespoon Dijon mustard
- 2 teaspoons salt
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon fresh thyme leaves
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, mix Panko bread crumbs, 1/4 cup Parmesan cheese, thyme leaves, and melted butter until combined.
- In a saucepan, heat milk over medium heat. In another skillet, melt butter and whisk in flour; gradually add warm milk while stirring until thickened.
- Remove from heat; stir in mustard, salt, spices, cream cheese, and 3 cups of smoked Gouda until smooth.
- Cook the elbow pasta according to package instructions until al dente. Drain well and return to the pot.
- Pour the cheese sauce over the pasta and stir well.
- Transfer the mixture to a buttered casserole dish; top with remaining Gouda and breadcrumb mixture.
- Bake for about 30 minutes or until golden brown on top.
