- 2 tbsp avocado oil
- 1 1/2 lb sea scallops
- 1 orange (zested and juiced)
- 1 lemon (juiced)
- 1 tbsp fresh ginger (grated)
- 2 tbsp butter (or ghee)
- Sea salt (to taste)
- Fresh thyme (for garnish)
Instructions
- Pat the scallops dry and season with sea salt.
- Heat avocado oil in a sauté pan over medium-high heat until hot. Sear the scallops for 1.5 to 2 minutes on each side until golden brown. Remove and set aside.
- In the same pan, reduce heat to medium and add orange juice, lemon juice, orange zest, grated ginger, and butter. Whisk until the sauce simmers.
- Return scallops to the pan, spoon sauce over them, let soak for a minute, then plate.
- Drizzle additional sauce on top and garnish with fresh thyme.
