  • 1 1/2 cups graham cracker crumbs
  • 1 cup granulated sugar (divided)
  • 6 tablespoons unsalted butter (divided)
  • 24 ounces cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 medium apples, peeled and diced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon sea salt for caramel sauce

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes.
  2. Beat softened cream cheese in a separate bowl until smooth. Gradually add in sugar, then eggs one at a time on low speed. Mix in vanilla extract and sour cream until combined.
  3. Pour filling over cooled crust, smoothing the top. Place in a larger roasting pan filled with water halfway up the sides and bake for 55-65 minutes until nearly set.
  4. Cool in the oven with the door cracked for an hour, then refrigerate for at least four hours or overnight.
  5. For the apple topping, melt remaining butter in a skillet over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg; cook until soft.
