- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 24 oz cream cheese (softened)
- 3/4 cup granulated sugar
- 3 large eggs
- 1 cup canned pumpkin puree
- 1 teaspoon vanilla extract
- 1 tablespoon pumpkin pie spice
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a greased 9×13 inch baking dish.
- Bake for 10 minutes; remove from oven to cool.
- In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well. Add eggs one at a time, mixing after each addition.
- Stir in pumpkin puree, vanilla extract, pumpkin pie spice until smooth.
- Pour filling over cooled crust and bake for 30-35 minutes until center is slightly jiggly.
- Cool at room temperature before refrigerating for at least 4 hours or overnight.
- Cut into bars and serve with whipped cream, caramel sauce, and chopped pecans.
