  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons all-purpose flour
  • 2 tablespoons light brown sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream softened butter with granulated and brown sugars until light and fluffy. Beat in the egg and vanilla.
  4. Gradually mix in dry ingredients until just combined; gently fold in diced peaches.
  5. In a small bowl, combine oats with melted butter, flour, brown sugar, and cinnamon for the streusel topping.
  6. Scoop dough onto the prepared baking sheet and sprinkle with streusel. Bake for 13-15 minutes until golden brown.
