  • 1 lb chicken sausage (sliced into half-moons)
  • 2 cups cooked jasmine rice (chilled)
  • 1 cup frozen sweet corn
  • 2 eggs (beaten)
  • 2 scallions (diced)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp avocado oil
  • 2 tbsp liquid aminos (or low-sodium soy sauce)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp sesame oil (optional)

Instructions

  1. Prepare ingredients: Slice chicken sausage, chop scallions and parsley, and beat eggs.
  2. Heat avocado oil in a large skillet over medium heat. Add chicken sausage and cook until browned, about 3-4 minutes per side. Stir in sweet corn and heat for another couple of minutes.
  3. Push mixture to one side of the skillet; pour beaten eggs into the empty space and scramble until just set.
  4. Add chilled jasmine rice, breaking up clumps as you go. Stir-fry for about 3-4 minutes. Drizzle with liquid aminos, mixing well.
  5. Turn off heat; drizzle with sesame oil if using, and garnish with scallions and parsley before serving.
