Ingredients

  • 1 tablespoon olive oil
  • 1 medium red onion, finely chopped
  • 2 large garlic cloves, chopped
  • 1 medium red bell pepper, diced
  • 1 medium zucchini, diced
  • 250 g mushrooms, sliced (½ lb)
  • 2 tablespoons tomato paste
  • ½ tablespoon Italian seasoning mix
  • 500 ml vegetable stock (or water)
  • 250 g uncooked short pasta (½ lb)
  • 500 ml pasta sauce
  • 125 g light mozzarella, grated (1 ½ cups)

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté onions and garlic until soft and translucent.
  2. Add red bell pepper, zucchini, and mushrooms; stir for about five minutes until softened.
  3. Mix in tomato paste and Italian seasoning; cook for another minute.
  4. Pour in vegetable stock and uncooked pasta; stir well. Cover and simmer for 10-12 minutes until pasta is cooked.
  5. Stir in pasta sauce and sprinkle grated mozzarella on top. Cover until melted.
  6. Season with salt and pepper to taste before serving.
