- 3/4 cup unsweetened almond milk
- 1/2 cup sugar substitute
- 1 tbsp butter
- 1 tsp vanilla extract
- 1 tsp molasses (or sugar-free maple syrup)
- 1/2 tsp cinnamon
- 1 1/2 tsp xanthan gum
- 1 1/2 cups pecan halves
Instructions
- For the crust, mix almond flour, cinnamon, powdered sweetener, and a dash of salt. Stir in melted butter until combined. Press firmly into a parchment-lined pan.
- In a pot over medium heat, combine unsweetened almond milk, sugar substitute, butter, vanilla extract, molasses (or maple syrup), and cinnamon until melted. Stir in xanthan gum and bring to a slight boil to thicken the mixture.
- Pour the caramel layer over the crust and top with pecan halves.
