- 1/2 cup cotija cheese (or alternative)
- 1/4 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice

Instructions
- Cook rotini pasta according to package instructions until al dente. Drain and cool.
- In a skillet over medium-high heat, char corn kernels for about 5-7 minutes until slightly browned.
