Ingredients

  • 1½ cups basmati rice
  • 1½ tablespoons olive oil
  • 1 medium sweet onion (finely chopped)
  • 2 medium carrots (peeled and grated)
  • 34 garlic cloves (minced)
  • 1½ teaspoon turmeric powder
  • 2¼ cups vegetable broth
  • Kosher salt and ground black pepper (to taste)
  • â…“ cup chopped parsley
  • â…“ cup sliced almonds

Instructions

  1. Rinse the basmati rice under cold water until clear to remove excess starch. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté the chopped onion, grated carrots, and minced garlic for about 5 minutes until softened.
  3. Stir in the turmeric powder and add the rinsed rice, cooking for an additional 2-3 minutes to absorb flavors.
  4. Pour in the vegetable broth, bring to a boil, then reduce heat to simmer. Cover and cook for 15-18 minutes until liquid is absorbed.
  5. Remove from heat and let it rest covered for an additional 5 minutes. Fluff with a fork, season with salt and pepper, then fold in parsley and almonds.
