- 3 pounds bone-in short ribs
- Kosher salt and freshly ground black pepper (to taste)
- 1/4 cup all-purpose flour
- 2 tablespoons extra-virgin olive oil
- 1 large yellow onion
- 2 stalks celery
- 1 medium carrot (optional)
- 4 cloves garlic
- 2 tablespoons tomato paste
- 2 teaspoons fresh chopped thyme
- 1 cup apple cider
- 1/2 cup pure maple syrup
- 2 cups beef stock
Instructions
- Season short ribs with salt and pepper, dust with flour. In a large pot, heat olive oil over medium-high heat; sear ribs until browned on all sides.
- Remove ribs and sauté onions, celery, carrot, garlic, and tomato paste in the same pot until softened.
- Deglaze with apple cider, scraping browned bits from the pot. Stir in thyme and return ribs along with maple syrup and beef stock.
- Cover tightly and braise on low heat or in an oven at 300°F (150°C) for about three hours until fork-tender.
