  • 3 pounds bone-in short ribs
  • Kosher salt and freshly ground black pepper (to taste)
  • 1/4 cup all-purpose flour
  • 2 tablespoons extra-virgin olive oil
  • 1 large yellow onion
  • 2 stalks celery
  • 1 medium carrot (optional)
  • 4 cloves garlic
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh chopped thyme
  • 1 cup apple cider
  • 1/2 cup pure maple syrup
  • 2 cups beef stock

Instructions

  1. Season short ribs with salt and pepper, dust with flour. In a large pot, heat olive oil over medium-high heat; sear ribs until browned on all sides.
  2. Remove ribs and sauté onions, celery, carrot, garlic, and tomato paste in the same pot until softened.
  3. Deglaze with apple cider, scraping browned bits from the pot. Stir in thyme and return ribs along with maple syrup and beef stock.
  4. Cover tightly and braise on low heat or in an oven at 300°F (150°C) for about three hours until fork-tender.
  5. Serve hot over creamy polenta or mashed potatoes, drizzled with sauce.
