  • 1 ½ cups graham cracker crumbs
  • ÂĽ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 4 large eggs
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries
  • 2 tbsp granulated sugar (for raspberry sauce)
  • 1 tbsp lemon juice (for raspberry sauce)

Instructions

  1. Prepare the raspberry sauce by simmering raspberries, sugar, and lemon juice in a saucepan over medium heat for about 5-7 minutes until thickened. Set aside to cool.
  2. Preheat the oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of a 9-inch springform pan. Bake for about 8-10 minutes until golden, then let cool.
  3. In a mixing bowl, beat softened cream cheese until smooth. Gradually mix in sugar, sour cream, lemon zest and juice, and vanilla extract. Add eggs one at a time on low speed.
  4. Pour the cheesecake filling over the cooled crust and swirl in the prepared raspberry sauce using a knife or toothpick.
  5. Bake for approximately 55-65 minutes until slightly jiggly in the center. Turn off oven and let it cool inside with door ajar for an hour.
  6. Refrigerate for at least four hours or overnight before serving.
