  • 1 Turkey Breast (about 34 pounds)
  • 2 tbsp Olive Oil
  • 4 cloves Garlic (minced)
  • 1 medium Onion (quartered)
  • 2 Carrots (chopped)
  • 2 Celery Sticks (chopped)
  • 1 cup Chicken Broth
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • Salt and Pepper to taste
  • Fresh Parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the turkey breast dry and rub with olive oil. Season generously with salt, pepper, thyme, and rosemary.
  3. In a Dutch oven, place onion, garlic, carrots, and celery at the bottom. Pour in chicken broth.
  4. Position the turkey breast on top of the vegetables and broth.
  5. Cover and bake for 1.5 to 2 hours until internal temperature reaches 165°F (74°C).
  6. Let rest for 15 minutes before slicing. Garnish with fresh parsley.
