- 3 medium sweet potatoes
- 2 tablespoons chopped onions
- 2 cloves garlic (minced)
- 1/4 cup bell peppers (chopped)
- 1 cup cooked black beans
- 1/2 cup vegan mozzarella cheese shreds
- 2 tablespoons vegan coconut yogurt
- 1/2 tablespoon olive oil
- 1/4 cup diced tomatoes
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
Instructions
- Preheat your oven to 400°F (200°C). Wash sweet potatoes and rub them lightly with olive oil. Place them on a baking sheet lined with parchment paper.
- Bake the sweet potatoes for about 45-50 minutes until soft.
- While baking, sauté onions in a skillet over medium heat until translucent. Add garlic and bell peppers; cook until softened.
- Stir in diced tomatoes and black beans. Season with sea salt, pepper, and paprika.
- Once the sweet potatoes are baked, slice them in half lengthwise and scoop out some flesh. Fill each half with the veggie mixture and top with vegan cheese shreds.
