Ingredients

  • 1 pound boneless beef chops (sliced into thin strips)
  • 8 ounces mushrooms (sliced)
  • 1 bag coleslaw mix
  • 1/3 cup green onions
  • 2 tablespoons olive oil
  • 1/2 cup soy sauce
  • 2 tablespoons Swerve brown sugar substitute
  • 1/4 cup rice vinegar
  • 1 teaspoon sesame oil
  • 4 teaspoons minced garlic
  • 2 teaspoons ginger paste
  • 2 large eggs (lightly beaten)

Instructions

  1. Whisk together the sauce ingredients in a bowl until smooth.
  2. Marinate the sliced beef in half of the sauce mixture for at least 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat, add the marinated beef and mushrooms, and cook until done.
  4. Push the beef mixture to one side of the skillet and scramble the beaten eggs on the other side until cooked through.
  5. Combine everything with the remaining sauce and add the coleslaw mix, stirring gently until heated through.
  6. Serve topped with fresh green onions.
