Ingredients

  • 6 large eggs
  • 4 strips turkey bacon, cooked and crumbled
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon sugar
  • Pinch of salt
  • Pinch of black pepper
  • Smoked paprika for garnish
  • Fresh chives, chopped (optional)

Instructions

  1. Boil the eggs in a saucepan covered with cold water. Bring to a boil, then remove from heat and cover for about 12 minutes.
  2. Transfer to an ice bath for five minutes to cool.
  3. Peel the eggs under running water, slice in half lengthwise, and scoop out the yolks into a bowl.
  4. Mash yolks with mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper until smooth.
  5. Stir in most of the crumbled turkey bacon.
  6. Spoon or pipe the mixture back into egg whites. Garnish with reserved bacon bits, smoked paprika, and chives if desired.
  7. Chill for at least 30 minutes before serving.
