  • ¾ cup vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 cups finely grated carrots
  • ½ cup crushed pineapple (drained)
  • 16 oz cream cheese (softened)
  • ½ cup granulated sugar
  • 1 tbsp cornstarch
  • 1 egg
  • ½ tsp vanilla extract
  • ¼ cup sour cream
  • ½ cup unsalted butter (softened)
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar (sifted)
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F. Prepare the cheesecake layer by beating softened cream cheese and sugar until smooth; mix in cornstarch, egg, vanilla extract, and sour cream. Pour into a lined pan and bake for 30–35 minutes. Let cool completely before chilling.
  2. Increase the oven temperature to 350°F. Combine dry ingredients (flour, baking powder, baking soda, salt, cinnamon, nutmeg) in one bowl and whisk together. In another bowl, mix sugars with vegetable oil; add eggs and vanilla extract. Combine wet and dry ingredients carefully before folding in grated carrots and optional crushed pineapple. Divide batter between two greased pans and bake for 28–32 minutes.
  3. For the frosting, beat softened butter and cream cheese until fluffy; gradually add powdered sugar followed by honey and vanilla extract.
  4. Assemble by layering: place one carrot cake layer on a serving plate, frost it lightly, add the chilled cheesecake layer on top, then place the second carrot cake layer on top of that. Frost generously around the sides and top as desired.
