  • 1 scoop vanilla whey protein
  • 1/2 tsp cinnamon
  • 1/2 cup coconut sugar
  • 1 container (5.3 oz) Greek yogurt (vanilla or plain)
  • 1 tsp vanilla extract
  • 2 tbsp melted coconut oil
  • 1 cup unsweetened almond milk
  • 1 1/2 cups finely grated zucchini
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the flour, baking powder, baking soda, protein powder, and cinnamon.
  3. In another bowl, whisk together the egg and coconut sugar until creamy. Add Greek yogurt, vanilla extract, melted coconut oil, and almond milk; mix well.
  4. Combine the wet and dry ingredients gently until just mixed.
  5. Fold in the grated zucchini until evenly distributed.
  6. Prepare a muffin pan with cooking spray or liners and fill each cup evenly with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool before transferring to a wire rack.
