- 4 cups cooked chicken breast
- 16 oz frozen corn
- 1 red bell pepper
- 1 red onion
- 1 jalapeno
- 1/2 cup light mayo
- 1/2 cup plain nonfat Greek yogurt
- Juice and zest of 1 lime
- Fresh cilantro and scallions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the red bell pepper, red onion, and jalapeno.
- Spread the chopped vegetables and frozen corn on a sheet pan, spray with olive oil, and sprinkle with salt. Roast for 20-25 minutes until caramelized.
- In a bowl, mix light mayo, Greek yogurt, lime zest and juice, cumin, paprika, additional salt, and chili powder to make the dressing.
- Once cooled slightly, combine roasted veggies with chopped chicken in the bowl with dressing.
- Add chopped scallions and cilantro; mix gently to combine.
