- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 8 ounces fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
Instructions
- Preheat your grill to medium heat.
- In a bowl, combine zucchini, red bell pepper, and red onion with olive oil, salt, pepper, oregano, and basil. Toss well.
