  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 tablespoon granulated sugar
  • 1 cup plus 2 tablespoons milk
  • 1/4 cup sour cream
  • 1 large egg
  • 3 tablespoons melted butter (plus more for cooking)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • Coarsely ground black pepper
  • 2 tablespoons mayonnaise
  • Maple syrup (for drizzling)

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar. In another bowl, mix milk, sour cream, egg, and melted butter until smooth. Fold wet ingredients into dry ingredients gently until just combined.
  2. Heat a non-stick skillet over medium heat and melt about half a tablespoon of butter. Pour in about a third cup of batter to form pancakes. When bubbles appear (about 3-4 minutes), flip one pancake and top with cheddar, mozzarella, Parmesan, and black pepper. Flip the second pancake as well and cook until golden brown.
  3. Assemble sandwiches by placing one cheesy pancake on top of another plain pancake. Spread mayonnaise on the top side before flipping it over gently to cook until golden brown on both sides.
  4. Continue with remaining batter and serve warm with maple syrup drizzled on top.
