  • 1 cup white rice (or brown rice)
  • 2 1/2 cups reduced sodium beef broth (divided)
  • 1 tbsp olive oil
  • 1 large sweet onion (very thinly sliced)
  • 1 sprig fresh thyme (stem removed)
  • 2 oz dried onion soup mix
  • 4 oz Gruyère cheese (shredded, or substitute with Swiss, provolone, or mozzarella)

Instructions

  1. In a medium saucepan, bring rice and two cups of beef broth to a boil over medium-high heat. Reduce heat to low, cover, and simmer for about 15 minutes until rice is tender.
  2. While the rice cooks, heat olive oil in a frying pan over low-medium heat. Add sliced onions and thyme, stirring occasionally for about 15-20 minutes until the onions are soft and caramelized.
  3. Combine cooked rice with caramelized onions, remaining broth, onion soup mix, and half of the shredded cheese. Mix well and season with salt and black pepper to taste.
  4. Transfer to an 8×8" or 9×9" baking dish. Top with remaining cheese and broil in the oven for 3-5 minutes until cheese is melted and golden.
