Ingredients

  • 12 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 2 tablespoons chipotle mayo
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons finely diced red onion
  • 1 tablespoon finely diced jalapeño (optional)
  • Paprika for garnish

Instructions

  1. Boil the eggs in cold water over medium heat for 10-12 minutes.
  2. Cool the eggs under running water and peel them.
  3. Halve the eggs lengthwise and scoop out yolks into a bowl; mash yolks until smooth.
  4. Mix in mayonnaise, sour cream, cilantro, lime juice, chili powder, salt, and pepper.
  5. Fill egg whites with yolk mixture using a spoon or piping bag.
  6. Top with crumbled cotija cheese, diced onion, jalapeño (if using), and drizzle with chipotle mayo.
  7. Garnish with paprika before serving.
