Ingredients

  • 3/4 Cup Rolled oats
  • 1/4 Cup Pecans
  • 1/4 teaspoon Cinnamon
  • 3 tablespoons Coconut oil (melted)
  • 2 tablespoons Low calorie granulated sweetener or honey
  • 1 Scoop Whey Protein (vanilla flavor)
  • 6 ounces Light cream cheese, softened
  • 1/2 teaspoon Vanilla extract
  • 2 Cups Vanilla Greek yogurt
  • 1/4 Cup Low calorie granulated sweetener (honey or agave will work)
  • 1 Cup Berries or mixed fruit

Instructions

  1. Prepare the crust by pulsing rolled oats and pecans in a food processor until coarsely chopped. Mix with cinnamon, melted coconut oil, and sweetener.
  2. Divide the mixture into four cups, pressing firmly to create a crust. Chill for 20 minutes.
  3. Beat softened cream cheese until fluffy; add whey protein powder, vanilla extract, Greek yogurt, and sweetener. Mix until smooth.
  4. Spread the cheesecake filling evenly over the chilled crusts. Refrigerate for another hour.
  5. Top each cup with fresh berries or mixed fruit before serving.
