  • 1 bag Success Boil-in-Bag Jasmine Rice or 1 heaping cup of cooked rice
  • 2 tablespoons butter
  • 1 onion, diced
  • 1 tablespoon minced garlic
  • 2 teaspoons Italian seasoning
  • 1 (28-ounce) can whole peeled tomatoes
  • 4 cups chicken stock
  • ¾ cup half & half or heavy cream
  • ¼ cup fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add diced onion, minced garlic, and Italian seasoning; sauté until onion is translucent (about 5 minutes). Season with salt and pepper.
  2. Pour in whole peeled tomatoes (with juices) and chicken stock; stir well and bring to a boil. Reduce heat to low, cover, and simmer for about 30 minutes.
  3. Remove from heat and blend the soup until smooth using an immersion blender.
  4. Stir in half & half (or heavy cream), fresh basil, and cooked rice until combined.
  5. Serve hot garnished with additional fresh basil, grated parmesan cheese, and a dollop of ricotta cheese.
