- 3 lbs Bone-In Beef Short Ribs
- 3 Cups Baby Carrots
- 2 Cups Sliced Mushrooms
- 2 Cups Beef Broth
- 1 Cup Apple Vinegar (optional)
- 2 Tbsp Tomato Paste
- 3 Tbsp Unsalted Butter
- 1 Bay Leaf
- 8 Sprigs Fresh Thyme
- 1 Tbsp Minced Garlic
- Salt and Pepper to taste
Instructions
- Season short ribs with salt and pepper. In a skillet over medium heat, brown the ribs on all sides for about 20 seconds each.
- Transfer browned ribs to the crockpot, adding baby carrots, mushrooms, beef broth, tomato paste, garlic, apple vinegar if using, bay leaf, thyme sprigs, and butter. Stir gently to combine.
- Cook on low for approximately 8 hours until the beef is tender and falls off the bone.
- Carefully remove short ribs and vegetables from the pot. Drizzle with the cooking liquid before serving.
