- Salt and pepper
- Egg roll wrappers

Instructions
- In a large bowl, mix lump crab meat, mayonnaise, Dijon mustard, beaten egg, breadcrumbs, green onions, red bell pepper, lemon juice, Old Bay seasoning, salt, and pepper until well combined.
- Lay an egg roll wrapper on a clean surface with one corner facing you. Place about two tablespoons of the crab mixture in the center. Fold the bottom corner over the filling tightly and then fold in both side corners before rolling up tightly to seal.
- Heat vegetable oil in a deep skillet over medium heat until it reaches 350°F (175°C). Carefully place each egg roll into the hot oil and fry until golden brown on all sides (about 3-4 minutes per side).
