- 2 tbsp olive oil
- 1 leek (finely sliced)
- 2 cloves garlic (finely chopped)
- Handful thyme leaves
- 150 ml white grape juice
- 1 jar posh butterbeans
- 250 ml chicken stock
- 200 g spinach
- 6 sausages (chicken or turkey recommended)
- 25 g sourdough breadcrumbs
- 2 tbsp crème fraîche
- 20 g parmesan (grated)
- Juice and zest of half a lemon
- Salt and pepper to taste
Instructions
- Finely slice the leek and chop the garlic.
- In a cast iron pot, heat olive oil over medium heat. Add leeks and cook for about 10 minutes until softened. Stir in garlic and thyme leaves; sauté for an additional 2 minutes.
- Pour in white grape juice, butterbeans, and chicken stock. Simmer for about 10 minutes.
- In a separate frying pan over high heat, brown the sausages until golden; they don’t need to be fully cooked yet.
- Add the browned sausages to the stew along with spinach; cover and simmer for an additional 20 minutes.
- Toast breadcrumbs in the same frying pan until golden brown.
- Stir crème fraîche, grated parmesan, lemon juice, and zest into the stew; season with salt and pepper to taste.
- Serve hot, topped with toasted breadcrumbs.
