Instructions
- Preheat the oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
- In a bowl, mash the ripe bananas until smooth. Add eggs, cottage cheese, coconut oil, brown sugar, and vanilla extract; whisk to combine.
- In another bowl, mix flour, cinnamon, baking powder, baking soda, and salt. Combine wet and dry ingredients gently until just mixed.
