- 1.2–1.5 kg chuck steak, cut into bite-sized pieces
- 1 tsp sea salt flakes
- ½ tsp freshly cracked black pepper
- ¼ cup plain flour
- 3 tbsp olive oil
- 1 onion, chopped
- 1 tbsp minced garlic
- 3 large carrots, sliced diagonally
- 2 tbsp tomato paste
- 3 cups beef stock
- 1 tsp dried thyme
- 2 bay leaves
- 1 cup frozen peas
Instructions
- Season the chuck steak with salt and pepper, then coat lightly with flour.
- Heat olive oil in a skillet over medium-high heat. Brown the beef on all sides and transfer to the crockpot.
- In the same skillet, sauté the onion and garlic until soft. Add them to the crockpot.
- Add carrots, tomato paste, beef stock, thyme, bay leaves, and water to the crockpot. Stir gently to combine.
- Cover and cook on low for 8 hours or high for about 4 hours.
- About 30 minutes before serving, stir in frozen peas mixed with cornflour dissolved in cold water for thickening.
