  • 1/2 cup chopped macadamia nuts
  • 4 tablespoons melted butter
  • 3 blocks cream cheese (24 oz total)
  • 1 cup sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tablespoons orange extract
  • 8 ounces semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, macadamia nuts, melted butter, sugar, and vanilla bean paste. Press into a springform pan for the crust.
  2. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in heavy cream, orange extract, and food color if desired.
  3. Pour filling over the crust and bake for about 60 minutes until set with a slight jiggle in the center. Cool gradually to prevent cracks.
  4. For the ganache, heat heavy cream until simmering and pour over chocolate chips; stir until smooth and add melted butter.
  5. Once the cheesecake has cooled completely, pour ganache over it and chill until set.
