  • 1/2 cup confectioners' sugar
  • 2 tablespoons cocoa powder
  • 1 1/4 cups multipurpose gluten free flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 rounded tablespoons cornstarch mixed with 3 tablespoons water
  • 1/2 cup unsalted butter or vegan baking stick, melted and cooled
  • 1 1/4 cups light brown sugar, packed
  • 1/4 cup plus 2 tablespoons milk
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons unsalted butter or vegan baking stick
  • 6 tablespoons semi-sweet chocolate chips
  • 2 tablespoons mini semi-sweet chocolate chips

Instructions

  1. In a bowl, mix cream cheese with confectioners' sugar and cocoa powder until smooth.
  2. Scoop dollops of the mixture onto parchment paper and freeze.
  3. Melt butter; combine with brown sugar, cornstarch mixture, and vanilla extract.
  4. In another bowl, whisk gluten-free flour, cocoa powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients; mix well.
  6. Chill the dough for 30 minutes.
  7. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  8. Form dough balls around frozen cheesecake filling and bake for 16 minutes.
  9. Cool slightly before reshaping; frost with remaining filling and drizzle with ganache.
