  • 1 lb turkey sausage, cooked and crumbled
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 cup fresh spinach (optional)
  • 8 large eggs
  • 1 cup milk (dairy or non-dairy)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook turkey sausage in a skillet over medium heat until crumbled; set aside. Sauté onion and bell pepper until softened.
  3. Spread frozen cauliflower tots in the baking dish, layer with turkey sausage and sautéed vegetables.
  4. In a bowl, whisk together eggs, milk, garlic powder, smoked paprika, Italian seasoning, salt, and pepper; pour over layered ingredients.
  5. Top with cheddar and mozzarella cheese.
