  • 1/2 cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 3 medium Granny Smith apples (peeled and diced)
  • 1 cup granulated sugar (for caramel)
  • 1/2 cup heavy cream
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1/4 tsp salt
  • 2 tbsp lemon juice
  • 1/4 cup water

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press into the bottom of the prepared pan.
  3. Beat softened cream cheese with granulated sugar until smooth. Add eggs one at a time and stir in vanilla extract.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg; layer over cheesecake mixture.
  5. For topping, mix flour, brown sugar, cold cubed butter, and chopped pecans until crumbly; sprinkle over apples.
  6. Bake for about 45 minutes until set in the middle.
  7. To make caramel sauce: heat granulated sugar and water until golden brown; stir in heavy cream, butter, and salt.
  8. Once cooled completely, cut into squares and drizzle with warm caramel before serving.
