Ingredients

  • 2 heads broccoli (about 1 and 1/2 pounds)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • Cooked turkey (instead of bacon)
  • Dressing: mayonnaise
  • lemon zest
  • lemon juice
  • white grape juice vinegar
  • sugar
  • kosher salt
  • black pepper
  • dry mustard
  • cayenne pepper

Instructions

  1. Cook the turkey until crispy and set aside to cool before chopping.
  2. In a large bowl, whisk together mayonnaise, lemon zest and juice, white grape juice vinegar, sugar, salt, black pepper, dry mustard, and cayenne pepper.
  3. Chop broccoli into small florets and add to the dressing along with cranberries, sunflower seeds, cheddar cheese, red onion, and most of the turkey—reserve some for topping.
  4. Stir gently until well coated.
  5. Chill in the fridge for at least 20 minutes before serving or enjoy immediately.
