  • 4 boneless, skinless chicken breasts
  • 2 tablespoons blackening seasoning
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • Salt (to taste)
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Preheat a large skillet over medium-high heat and add olive oil.
  2. Coat both sides of the chicken breasts with blackening seasoning and sear for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  3. In another pot, boil salted water and cook fettuccine according to package instructions until al dente.
  4. In a separate pan, melt butter over medium heat and sauté minced garlic until fragrant. Pour in heavy cream and simmer gently before stirring in freshly grated Parmesan cheese until melted.
  5. Slice the rested chicken into pieces and combine it with the drained pasta and creamy sauce in one pot. Toss gently to coat before serving.
