- 2 medium sweet potatoes
- 1 large yellow onion
- 1 tablespoon olive oil
- 1/4 teaspoon salt (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle powder (or chili powder)
- 1 medium head broccoli
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce (divided)
Instructions
- Preheat your oven to 400°F.
- Peel and chop sweet potatoes into ½" chunks and onion into 1-inch pieces. In a lined sheet pan, combine them with olive oil, half the salt, garlic powder, and chipotle powder. Toss well.
- Bake for about 20 minutes until tender.
- After 20 minutes, add broccoli florets to the pan and push sweet potatoes to one side. Place seasoned chicken breasts next to the broccoli and brush with ¼ cup BBQ sauce.
- Bake again for another 15-20 minutes until chicken is cooked through.
- Shred the chicken with two forks, mix everything with remaining BBQ sauce, and serve in bowls.
