  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 50 g brown sugar
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs
  • For streusel topping: 55 g unsalted butter, 50 g all-purpose flour, 50 g brown sugar, 20 g rolled oats

Instructions

  1. Prepare the Crust: Crush Lotus biscoff cookies and mix with melted butter. Press into the bottom of a springform pan.
  2. Make the Apple Filling: Toss sliced apples with brown sugar and cinnamon; set aside.
  3. Create the Cheesecake Batter: Beat softened cream cheese with granulated sugar until smooth. Add Greek yogurt and eggs one at a time until well combined.
  4. Layer the Ingredients: Pour half of the cheesecake batter over the crust, add apple mixture, then top with remaining batter.
  5. Bake: Bake in a preheated oven until slightly jiggly in the center.
  6. Add Streusel Topping: Sprinkle mixed streusel on top and return to bake until golden brown.
