Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham-cracker crumbs, granulated sugar, and melted butter until resembling wet sand. Press into a 9-inch springform pan. Bake for 8–10 minutes until lightly golden.
  3. In another bowl, whisk softened cream cheese until smooth. Add brown sugar and mix well. Incorporate sour cream, vanilla extract, and eggs one at a time.
  4. Pour the cheesecake batter over the crust. Toss apple slices with light brown sugar and cinnamon; layer over the batter.
  5. Bake for 35–40 minutes until edges are set but center jiggles slightly. Cool in the oven for an hour.
  6. Chill in the refrigerator for at least 4 hours or overnight.
  7. Prepare topping by mixing rolled oats with melted butter and brown sugar; sprinkle on top before baking at 375°F (190°C) for about 12–15 minutes.
