  • 2 medium boneless skinless chicken breasts

  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 tablespoons olive oil
  • 1 small red onion (diced)
  • 2 cloves garlic (minced)
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/4 cup Greek yogurt
  • 1/4 cup crumbled Cotija cheese or feta
  • 1/4 cup chopped fresh cilantro
  • 1 avocado (sliced)
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions and keep warm.
  2. Season the chicken with salt, pepper, chili powder, and cumin. Heat olive oil in a skillet over medium-high heat and cook the chicken for about 6-8 minutes per side until golden brown and fully cooked. Let rest before slicing.
