  • ¾ cup oat/almond milk
  • â…” cup sugar
  • 3 tablespoons olive oil
  • 2 teaspoons vanilla bean paste
  • 1¼ cup pastry flour
  • ½ teaspoon salt
  • ½ teaspoon cardamom
  • ½ cup vegan butter (for frosting)
  • ½ teaspoon rosewater

Instructions

  1. Preheat the oven to 350°F (175°C). In a large bowl, whisk together oat milk, sugar, olive oil, and vanilla until smooth.
  2. In another bowl, sift together pastry flour, salt, cardamom, baking powder, and baking soda. Gradually mix into the wet ingredients until just combined.
  3. Pour batter into lined cupcake trays and bake for about 22 minutes or until a toothpick comes out clean. Let cool completely.
  4. For the frosting, cream vegan butter and shortening until fluffy. Mix in vanilla and rosewater gradually while adding powdered sugar until desired sweetness is reached.
  5. Frost cooled cupcakes and garnish with dried rose petals.
