- 3 tablespoons olive oil
- 2 teaspoons vanilla bean paste
- 1¼ cup pastry flour
- ½ teaspoon salt
- ½ teaspoon cardamom
- ½ cup vegan butter (for frosting)
- ½ teaspoon rosewater
Instructions
- Preheat the oven to 350°F (175°C). In a large bowl, whisk together oat milk, sugar, olive oil, and vanilla until smooth.
- In another bowl, sift together pastry flour, salt, cardamom, baking powder, and baking soda. Gradually mix into the wet ingredients until just combined.
- Pour batter into lined cupcake trays and bake for about 22 minutes or until a toothpick comes out clean. Let cool completely.
- For the frosting, cream vegan butter and shortening until fluffy. Mix in vanilla and rosewater gradually while adding powdered sugar until desired sweetness is reached.
